Steve’s Leaves Baby Spinach & Super Leaves Super Speedy Salmon Traybake

WHAT TO PUT IN
2 salmon fillets
200g new potatoes
1 bag Steve’s Leaves Baby Spinach & Super Leaves
For the herby topping:
50g Breadcrumbs (tip: blitz old bread and freeze in a freezer bag, can use from frozen!),
big squeeze of lemon,
crushed clove of garlic,
1 teaspoon of dried basil or handful of chopped fresh basil,
1 teaspoon of olive oil
WHAT TO DO
Par boil the potatoes for 10 minutes.
Place the potatoes on a baking tray, drizzle over tablespoon olive oil, pinch of salt and pepper and toss the potatoes in it.
Mix the herby topping together and press onto the salmon fillet (skin side down)
Place the salmon on the tray with the potatoes and bake at 200°C for 15 mins.
Serve on a bed of Steve’s Leaves Baby Spinach & Super Leaves. Add lemon juice & olive oil the leaves to taste.
