Egg & Watercress Sandwich

Simple, classic, delicious.
Serves 2 in 15 mins
WHAT TO PUT IN
1 bag of Baby Watercress & Little Leaves
2 large hard boiled eggs
(preferably free range)
2 tablespoons of light mayo
4 thick slices of wholegrain bread
Soft butter
Freshly ground black pepper
WHAT TO DO
Slice the eggs onto buttered bread and add a dollop of mayonnaise (or if you prefer, mash the eggs and mix with the mayonnaise).
Top with Steve’s ‘easy to get your mouth around’ Baby Watercress. Enjoy!
